Ingredients

  • For the Chicken:

    • 250 grams chicken breast (cut into 4 pieces)
  • Wet Batter:

    • 1 small packet of seasoned flour
    • 100 grams all-purpose flour
    • Water as needed
  • Dry Coating:

    • 100 grams tapioca flour
    • 100 grams bread crumbs (or replace with additional all-purpose flour)
  • For the Sambal:

    • 6 large green chilies
    • 12 bird’s eye chilies
    • 3 cloves garlic
    • 5 shallots
    • A small amount of shrimp paste
    • Salt to taste

Instructions

  1. Prepare the Chicken:

    • Season the chicken pieces with salt and pepper. Allow them to marinate for a few minutes.
  2. Prepare the Battering Mixtures:

    • In a bowl, mix the seasoned flour with all-purpose flour. Gradually add water to achieve a smooth batter.
    • In a separate bowl, combine the tapioca flour with bread crumbs (or additional all-purpose flour). Set aside.
  3. Coat the Chicken:

    • Dip each chicken piece into the wet batter, ensuring it is well-coated.
    • Transfer the battered chicken to the dry coating mixture, pressing gently to adhere the coating evenly.
  4. Fry the Chicken:

    • Heat oil in a pan over low heat. Fry the coated chicken pieces until they are golden brown and crispy, ensuring they are cooked through. This might take a bit longer at lower heat but will ensure an even cook and crispy texture.
  5. Prepare the Sambal:

    • While the chicken is frying, blend the green chilies, bird’s eye chilies, garlic, shallots, and shrimp paste until smooth.
    • In a small pan, heat 2 tablespoons of the oil used for frying the chicken. Add the blended sambal mixture to the pan and cook for a few minutes, stirring frequently, until the sambal is fragrant and the flavors have melded together. Season with salt to taste.
  6. Assemble the Dish:

    • Once the chicken is crispy and fully cooked, drain excess oil and place the chicken on a serving plate.
    • Generously top the chicken with the freshly made sambal ijo.
  7. Serve and Enjoy:

    • Serve the Ayam Geprek Sambal Ijo immediately, with steamed rice or as a standalone dish. Enjoy the deliciously crispy chicken paired with the vibrant and spicy green chili sambal.

This Indonesian favorite brings together the satisfying crunch of fried chicken with the bold, tangy heat of sambal ijo, creating a delightful combination that’s perfect for any meal.
