Spicy Grilled Chicken with Rica Seasoning
Ingredients:

For the Spice Paste:
- 12 shallots
- 4 cloves garlic
- 2 tomatoes
- 7 red chilies
- 4 bird’s eye chilies (optional for extra heat)
- 1 tsp salt
- 1/2 tsp sugar

- 250g chicken, cut into pieces
- 3 kaffir lime leaves
- 200ml water
- 1/2 block tempeh, diced and fried
- 3 blocks tofu, diced and fried

- 1/2 tsp salt (for seasoning)
- 1/2 tsp all-purpose seasoning (or substitute with broth powder)
- Pepper, to taste
- 1/2 tsp paprika powder
- 1/4 tsp nutmeg powder

Prepare the Spice Paste: In a pan, heat some oil and sautรฉ the shallots, garlic, tomatoes, red chilies, bird’s eye chilies, salt, and sugar until fragrant.

Cook the Chicken: Add the chicken pieces and cook until they are firm. Then, add in the fried tempeh and tofu. Mix well.

Season and Simmer: Pour in the water and add all the seasoning ingredients: salt, all-purpose seasoning (or broth powder), pepper, paprika powder, and nutmeg powder. Stir well and simmer until the liquid reduces.

Adjust the Taste: Taste and adjust the seasoning according to your preference.

Grill the Chicken: Preheat your oven to 220ยฐC (428ยฐF). Transfer the chicken mixture to an oven-safe dish. Cover with aluminum foil or banana leaves.

Bake: Bake in the preheated oven for about 45 minutes until the chicken is cooked through and tender.

Serve: Once done, remove from the oven and serve hot.
