Crispy Snapper with Mango Sambal
Ingredients:
- 1/2 kg snapper fish
- Coriander, to taste
- 2 cloves garlic
- Tamarind paste, to taste
- Salt
For the Mango Sambal:
- 1 green mango
- Roasted shrimp paste
- 20 bird’s eye chilies (adjust to taste)
- Salt, to taste
Instructions:
- Grind all ingredients except those for the sambal in a mortar and pestle. After grinding, marinate the fish evenly.
- Fry the fish until cooked. Once done, grind the sambal ingredients and finely chop the green mango (crush in a mortar and pestle so the mango juice can come out).
- Ready to serve with hot rice.
