Keto Nasi Bakar Ayam: A Flavorful and Healthy Delight
Ingredients:
- 3 chicken breasts or thighs
- 12 red chilies
- 4 whole bird’s eye chilies
- 60 cc coconut milk (Kara brand or similar)
- 10 tablespoons shirataki rice
- 6 shallots
- 3 garlic cloves
- 2 roasted candlenuts (kemiri)
- Salt and non-MSG seasoning to taste
- 1 stalk lemongrass, bruised
- 1 piece galangal, bruised
Instructions:

Prepare the Shirataki Rice:
- Cook the shirataki rice according to the package instructions. Once cooked, divide the rice into two portions. Mix half of the rice with 60 cc of coconut milk, season with salt, and add 2 tablespoons of cooking oil to give the rice a glossy finish.

- Boil the chicken with seasoning to infuse flavor into the meat. Once cooked, shred 3 pieces of chicken into strips. Reserve the remaining chicken for frying later; store it in the refrigerator.

- Blend the red chilies, shallots, garlic, and roasted candlenuts until smooth. Heat a pan and sauté the spice paste until fragrant. Add the bruised lemongrass and galangal, continuing to cook until aromatic. Stir in the shredded chicken and cook until well combined with the spices.

- Transfer the spiced chicken mixture to a Happy Call pan or a similar grilling pan. Grill until the mixture changes color and develops a slightly crispy texture.
