🥄 Ingredients
Meatloaf:
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 3 large eggs
- 2 cups milk
- 1 pound lean ground beef
- 1 cup ketchup
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons Worcestershire sauce
- 1/2 cup fresh parsley, chopped
- 2 cups bread crumbs
Glaze:
- 1 cup ketchup
- 2 tablespoons Dijon mustard
🍴 Instructions
-
Preheat the Oven:
Preheat your oven to 375°F (190°C). -
Prepare the Onion Mixture:
Heat a tablespoon of oil in a medium skillet over medium heat. Add the finely chopped onions and minced garlic to the skillet, cooking until they are tender and fragrant, about 5-7 minutes. Set this mixture aside to cool slightly. -
Combine Wet Ingredients:
In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the bread crumbs and let this mixture sit for a couple of minutes to allow the bread crumbs to absorb some of the liquid. -
Mix the Meatloaf:
Add the cooked onion and garlic mixture to the bowl. Then, add the lean ground beef, ketchup, Dijon mustard, salt, pepper, Worcestershire sauce, and fresh parsley. Use your hands or a sturdy spatula to mix everything together until evenly combined, but be careful not to overwork the meat. -
Form the Meatloaf:
Press the meatloaf mixture into a 9×5-inch loaf pan, smoothing the top. Cover the pan with aluminum foil to prevent the top from browning too quickly. -
Bake the Meatloaf:
Place the covered loaf pan in the preheated oven and bake for 1 hour. -
Prepare the Glaze:
While the meatloaf is baking, prepare the glaze by combining the ketchup and Dijon mustard in a small bowl. Stir until smooth and set aside. -
Glaze the Meatloaf:
After 1 hour of baking, remove the meatloaf from the oven. Carefully drain off any excess fat from the loaf pan. Spread the prepared glaze evenly over the top of the meatloaf. -
Finish Baking:
Return the meatloaf to the oven, uncovered, and bake for an additional 30 minutes, or until the glaze is set and the meatloaf is cooked through. -
Serve:
Allow the meatloaf to rest for a few minutes before slicing. Serve hot with your favorite sides and enjoy!
