Bonnie’s Best Meatloaf

I never met Bonnie, but I’ve been making her meatloaf for years! This classic recipe is a hit with everyone and makes a wonderful weeknight family dinner. Serve it with her delectable glaze on top, or your favorite tomato or mushroom sauce. Pair it with garlic mashed potatoes and a green vegetable for a complete meal. And if you’re lucky enough to have leftovers, they make for a delicious sandwich the next day.

🥄 Ingredients

Meatloaf:

  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 3 large eggs
  • 2 cups milk
  • 1 pound lean ground beef
  • 1 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup fresh parsley, chopped
  • 2 cups bread crumbs

Glaze:

  • 1 cup ketchup
  • 2 tablespoons Dijon mustard

🍴 Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C).

  2. Prepare the Onion Mixture:
    Heat a tablespoon of oil in a medium skillet over medium heat. Add the finely chopped onions and minced garlic to the skillet, cooking until they are tender and fragrant, about 5-7 minutes. Set this mixture aside to cool slightly.

  3. Combine Wet Ingredients:
    In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the bread crumbs and let this mixture sit for a couple of minutes to allow the bread crumbs to absorb some of the liquid.

  4. Mix the Meatloaf:
    Add the cooked onion and garlic mixture to the bowl. Then, add the lean ground beef, ketchup, Dijon mustard, salt, pepper, Worcestershire sauce, and fresh parsley. Use your hands or a sturdy spatula to mix everything together until evenly combined, but be careful not to overwork the meat.

  5. Form the Meatloaf:
    Press the meatloaf mixture into a 9×5-inch loaf pan, smoothing the top. Cover the pan with aluminum foil to prevent the top from browning too quickly.

  6. Bake the Meatloaf:
    Place the covered loaf pan in the preheated oven and bake for 1 hour.

  7. Prepare the Glaze:
    While the meatloaf is baking, prepare the glaze by combining the ketchup and Dijon mustard in a small bowl. Stir until smooth and set aside.

  8. Glaze the Meatloaf:
    After 1 hour of baking, remove the meatloaf from the oven. Carefully drain off any excess fat from the loaf pan. Spread the prepared glaze evenly over the top of the meatloaf.

  9. Finish Baking:
    Return the meatloaf to the oven, uncovered, and bake for an additional 30 minutes, or until the glaze is set and the meatloaf is cooked through.

  10. Serve:
    Allow the meatloaf to rest for a few minutes before slicing. Serve hot with your favorite sides and enjoy!
