Indonesian Golden Spiced Chicken (Ayam Ungkep Bumbu Kuning)

Ayam Ungkep Bumbu Kuning Recipe

Ingredients:

  • 1 whole chicken

For the spice paste:

  • 5 cloves garlic
  • 7 cloves shallots
  • 2 candlenuts
  • 1 large piece of turmeric
  • 1 large piece of ginger
  • 1 large piece of galangal
  • Chicken bouillon powder (Royco or equivalent), to taste
  • Salt, to taste
  • Water, as needed

Additional ingredients:

  • 3 bay leaves
  • 3 kaffir lime leaves
  • 2 stalks lemongrass, bruised

Instructions:

  1. Prepare the Chicken:

    • Thoroughly clean the chicken under running water. Pat dry with paper towels.
    • Fry the chicken until the fat renders out and the skin becomes golden. Discard the frying oil and set the chicken aside.
  2. Make the Spice Paste:

    • In a mortar and pestle or food processor, grind the garlic, shallots, candlenuts, and turmeric until you achieve a smooth paste.
    • Bruise the ginger, galangal, and lemongrass by lightly smashing them with the back of a knife or a meat mallet.
  3. Cook the Spice Paste:

    • Heat a small amount of oil in a large pan over medium heat. Add the spice paste and sauté until fragrant, about 5-7 minutes.
    • Add the bay leaves and kaffir lime leaves, stirring to combine.
  4. Simmer the Chicken:

    • Pour in enough water to cover the chicken and bring it to a boil.
    • Add the chicken bouillon powder and salt to taste. Stir well.
    • Once the water is boiling, reduce the heat to low and add the chicken to the pan.
    • Simmer until the water reduces by half and the flavors have infused into the chicken, approximately 45 minutes. Adjust the seasoning if needed.
  5. Finishing:

    • Once the liquid has reduced, turn off the heat and let the chicken rest in the spice mixture for a few minutes before serving.
    • You can serve the chicken immediately or store it for later use. If storing, fry the chicken briefly before serving to enhance the flavor and texture.

  • This dish can be served with steamed rice and a side of fresh vegetables for a complete meal.
  • For an extra kick, consider adding a few chopped chili peppers to the spice paste.
  • Leftover ayam ungkep can be refrigerated and then fried for a quick meal on another day.
