Salmon with Lemon Butter Sauce Recipe
Ingredients:
- 4 salmon fillets
- Juice and zest of 1/2 lemon
- 1 cup full cream UHT milk
- 3 cloves garlic, minced
- 1/4 onion, finely chopped
- 3 tablespoons unsalted butter (plus extra for cooking)
- Salt to taste
- Black pepper to taste
- Olive oil
- 1 teaspoon sugar (optional)
For the Side:
- Potatoes, cut into wedges (fresh or frozen)
- Onion-flavored breading mix
- 1 cup diced carrots
- 1 cup corn kernels
- 1 cup diced green bell pepper
Instructions:
-
Marinate the Salmon:
- Season the salmon fillets with salt, black pepper, and a drizzle of olive oil. Allow them to marinate for about 10 minutes, so the flavors infuse into the fish.
-
Prepare the Lemon Butter Sauce:
- In a skillet, heat a small amount of butter over medium heat. Add the minced garlic and chopped onion, cooking until fragrant and softened.
- Stir in the lemon juice and full cream UHT milk. Mix well.
- Add the lemon zest, salt, black pepper, and a pinch of sugar, if desired. Incorporate the remaining butter into the mixture, stirring until fully melted. Remove from heat and set aside.
-
Cook the Vegetables and Potatoes:
- In a separate skillet, heat butter and sauté the diced carrots, corn, and green bell pepper until tender. Season with salt and black pepper to taste. Set aside.
- For the potatoes, toss them in onion-flavored breading mix and fry in hot oil until golden and crispy. Alternatively, bake them according to the package instructions if using frozen.
-
Cook the Salmon:
- Heat a bit of butter or olive oil in a non-stick skillet over medium heat. Cook the salmon fillets for about 4-5 minutes on each side, or until they are cooked through and flaky.
-
Assemble the Dish:
- Arrange the cooked salmon fillets on a serving plate. Place the crispy potato wedges and sautéed vegetables alongside the fish. Drizzle the lemon butter sauce generously over the salmon.
-
Serve:
- Garnish with fresh lettuce or herbs if desired. Serve immediately, enjoying the combination of the rich lemon butter sauce with the tender salmon and vibrant sides.
This dish pairs beautifully with a light, fresh salad or steamed greens, making it a well-rounded and satisfying meal perfect for any occasion.
