Kentucky Mozzarella Chicken
Ingredients:
- 1/4 chicken, cut into pieces
- All-purpose flour (I used Sasa brand)
- Cornstarch
- Ground black pepper (I used Lada’ku brand)
- Salt
- Mozzarella cheese
- Garlic, to taste
- Red onions, to taste
- Chili peppers, to taste
Instructions:

Prepare the Chicken:
- Rinse the cut chicken pieces under cold water and drain thoroughly. Season with salt and ground black pepper.

Prepare the Coating:
- Wet Batter: In a bowl, combine all-purpose flour and cornstarch with just enough water to create a batter that is thick but not too runny.
- Dry Coating: In another bowl, mix more all-purpose flour and cornstarch without adding water. For an extra kick, add a bit of Boncabe chili seasoning to the dry mixture.

Coat the Chicken:
- Dip each piece of chicken into the wet batter, ensuring it is fully coated.
- Transfer the chicken to the dry coating mixture, pressing gently to ensure an even coating.

Fry the Chicken:
- Heat oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and crispy. Remove from the oil and drain on paper towels.

Prepare the Mozzarella:
- Place the mozzarella cheese in a heatproof plastic container. Heat it using a double boiler method: place the container in a pot of simmering water, allowing the cheese to melt gently.

Make the Sambal:
- In a mortar and pestle, grind the garlic, red onions, and chili peppers into a coarse paste. Add a pinch of salt and a bit of sugar to taste. For additional flavor, squeeze in some small lime or lemon juice.

Assemble the Dish:
- Serve the fried chicken with a generous layer of the sambal on top. Drizzle melted mozzarella cheese over the sambal and chicken.
