Ingredients

1 kg chicken

Spice Paste:

  • 200 grams ginger
  • 2 stalks lemongrass
  • 100 grams bird’s eye chili
  • 10 red curly chilies
  • 10 shallots
  • 5 garlic cloves

Additional Ingredients:

  • 200 grams palm sugar
  • 100 grams tamarind
  • Salt to taste
  • Chicken-flavored bouillon (Royco) to taste
  • 3 ladles cooking oil
  • 300 cc water

Instructions

  1. Prepare the Spice Paste: Begin by creating the spice paste. Combine the ginger, lemongrass, bird’s eye chilies, red curly chilies, shallots, and garlic cloves in a food processor or blender. Blend until smooth.

  2. Sauté the Spice Paste: Heat the cooking oil in a large pan over medium heat. Add the spice paste and sauté until fragrant, ensuring that it doesn’t burn. This step helps to release the aromatic flavors of the spices.

  3. Cook the Chicken: Add the cleaned chicken pieces to the pan. Stir well to coat the chicken with the spice paste evenly.

  4. Add the Remaining Ingredients: Pour in the water, followed by the tamarind, salt, chicken-flavored bouillon, and palm sugar. Stir to combine all the ingredients thoroughly.

  5. Simmer Until Tender: Allow the chicken to cook over medium heat until it becomes tender, similar to a braised chicken. This process allows the flavors to meld and penetrate the chicken.

  6. Reduce the Sauce: Once the chicken is tender, taste and adjust the seasoning if necessary. Continue to cook until the liquid reduces and thickens, and the spices are fully absorbed into the chicken.

  7. Grill the Chicken: Preheat a grill pan or an outdoor grill. Once hot, place the chicken pieces on the grill. Cook until the chicken has a nice char and is slightly crispy on the outside, enhancing the overall flavor and texture.

  8. Serve: Remove the grilled chicken from the grill and serve hot. This delicious Ayam Panggang pairs perfectly with steamed rice and fresh vegetables, offering a delightful meal that embodies the rich flavors of Indonesian cuisine.

Enjoy this aromatic and flavorful Ayam Panggang, a perfect dish for any occasion, bringing the authentic taste of Indonesian grilling to your table.
