Spinach Chicken Quiche (Keto-Friendly)

Ingredients:

  • 50 grams fresh spinach
  • 100 grams chicken (or tuna/beef, but here we’ll use chicken)
  • 50 grams shredded cheese
  • 50 grams plain yogurt
  • 2 large eggs
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 stalk celery, finely chopped
  • Oregano to taste
  • Butter for greasing

Instructions:

  1. Prepare the Spinach:
    Begin by blanching the spinach. Submerge the spinach leaves in a pot of boiling water for just a few seconds until they are half-cooked. Remove them promptly, drain, and squeeze out excess moisture. Slice the spinach finely and set it aside.

  2. Prepare the Chicken:
    Finely chop the chicken into small pieces and set it aside.

  3. Mix the Eggs:
    In a bowl, whisk the eggs until the whites and yolks are well combined.

  4. Combine Ingredients:
    In a large mixing bowl, combine the prepared spinach, chopped chicken, and beaten eggs. Add in the minced garlic, freshly ground black pepper, salt, shredded cheese, plain yogurt, and finely chopped celery. Stir everything together until well mixed.

  5. Prepare the Baking Dish:
    Grease a baking dish or quiche pan with a thin layer of butter.

  6. Transfer and Season:
    Pour the mixture into the prepared baking dish. Sprinkle the top with oregano to your taste.

  7. Cook the Quiche:
    Steam or bake the quiche. For steaming, cook for 15-20 minutes. If baking, it will typically take a bit longer. The quiche is done when it is set and lightly golden on top.
