Lidah Sapi Cabe Hijau: Spicy Beef Tongue Stir-Fry

Ingredients:

  • 1/3 of beef tongue, thinly sliced (approximately 200 grams)
  • 1 small onion (Bawang Bombay)
  • 3 shallots (Bawang Merah)
  • 2 cloves of garlic (Bawang Putih)
  • 2 large green chilies (Cabe Hijau Besar)
  • 2 curly green chilies (Cabe Hijau Keriting)
  • Salt, to taste
  • Soy sauce (Kecap), to taste
  • Oyster sauce (Saus Tiram), to taste

Instructions:

  1. Prepare the Beef Tongue: Begin by boiling the beef tongue in water until it becomes tender. This can take about 1-2 hours, depending on the size of the tongue. Once tender, drain and let it cool. Slice the beef tongue thinly.

  2. Prepare the Aromatics: Finely chop the small onion, shallots, and garlic. Slice the large green chilies and curly green chilies.

  3. Sauté the Aromatics: In a hot pan, add a bit of oil and sauté the chopped onion, shallots, and garlic until they become fragrant and slightly golden.

  4. Add the Chilies: Add both types of chilies to the pan and stir-fry for another minute to infuse the flavors.

  5. Cook the Beef Tongue: Add the thinly sliced beef tongue to the pan. Stir-fry everything together to ensure the beef is well-coated with the aromatic mixture.

  6. Season: Season with salt, soy sauce, and oyster sauce to taste. Mix well and adjust the seasoning as needed.

  7. Finish and Serve: Cook for an additional 2-3 minutes, allowing the flavors to meld. Serve hot as a flavorful and spicy main dish.
