Tender Beef Tongseng Recipe

Ingredients:

  • 500 grams beef (cut into small pieces)
  • 1 onion (thinly sliced into half-moons)
  • 2 liters water
  • 3 tablespoons cooking oil (for sautéing)

Blender Ingredients:

  • 10 shallots
  • 5 cloves garlic
  • 5 cm ginger
  • 1 teaspoon coriander seeds
  • 6 candlenuts
  • 1 teaspoon turmeric powder (or 3 cm fresh turmeric)

Seasoning Ingredients:

  • 2 stalks lemongrass (lightly crushed)
  • 5 kaffir lime leaves
  • 3 bay leaves
  • 3 bird’s eye chilies (prick in the middle or slice)
  • 1 teaspoon beef bouillon powder
  • Salt to taste

Topping (per serving):

  • 3 cabbage leaves (thinly sliced)
  • 1 small tomato (thickly sliced)
  • 3 scallions (cut into thick strips)
  • 1 tablespoon sweet soy sauce
  • Fried shallots (for garnish, optional)

Instructions:

  1. Prepare the Base: In a large pot, heat the cooking oil over medium heat. Sauté the sliced onion until it becomes translucent and fragrant. Add the blended spices (shallots, garlic, ginger, coriander, candlenuts, and turmeric) and cook until the mixture thickens and the oil starts to separate.

  2. Cook the Beef: Add the beef pieces to the pot. Sauté until the beef changes color from red to brown and is partially cooked.

  3. Simmer: Pour in the water and add the seasoning ingredients (lemongrass, kaffir lime leaves, bay leaves, and bird’s eye chilies). Stir well and bring to a boil. Once boiling, cover the pot and reduce the heat. Simmer until the liquid reduces by half.

  4. Adjust the Seasoning: Taste the broth and adjust the salt as needed. Turn off the heat once the flavors are balanced and the beef is tender.

  5. Serve: For individual servings, heat a separate pan. Add about one ladle of beef and two ladles of broth. Bring to a boil and then add the sliced cabbage. Cook until the cabbage is wilted. Stir in the sweet soy sauce. Finally, turn off the heat and add the sliced tomato and scallions. Transfer to serving bowls and optionally top with fried shallots for extra crunch and flavor.
