Sweet and Spicy Beef Ribs Recipe

Ingredients:

  • 1 kg beef ribs
  • 4 cloves garlic
  • 6 shallots
  • 1 ounce dried red chilies
  • 2 slices galangal
  • Palm sugar (can substitute with brown sugar), to taste
  • Granulated sugar, to taste
  • Salt, to taste
  • 1.5 sachets of flavor enhancer
  • 2 sachets sweet soy sauce (kecap manis)

Instructions:

  1. Prepare the Beef: Start by boiling the beef ribs until they are tender, adding a pinch of salt to the water. Once the meat is tender, remove it from the pot and set it aside, keeping the broth for later use.

  2. Prepare the Aromatics: Slice the garlic, shallots, and dried red chilies. Don’t forget to wash them thoroughly. Also, slice the galangal into thin pieces.

  3. Sauté the Aromatics: In a hot pan with a bit of oil, sauté the sliced garlic, shallots, dried red chilies, and galangal until they release their fragrant aroma.

  4. Combine and Simmer: Add the boiled beef ribs along with some of the reserved beef broth to the pan. Stir well to combine all the ingredients.

  5. Season: Add salt, flavor enhancer, and sweet soy sauce to taste. Adjust the seasoning with palm sugar or granulated sugar according to your preference for sweetness.

  6. Final Adjustments: Taste the dish and adjust the seasoning if necessary. If the beef is not yet tender enough, continue simmering until it reaches your desired tenderness.

  7. Serve: Once the flavors are well combined and the beef is tender, remove the dish from the heat. Serve hot and enjoy!
