Chicken Marsala Recipe: A Family Favorite

Ingredients:

  • 4 boneless skinless chicken breasts

Instructions:

  1. Prepare the Chicken:
    Begin by melting 1/4 cup of butter in a skillet over medium heat. While the butter is melting, lightly coat the chicken breasts with flour. This will help achieve a beautiful golden-brown crust.

  2. Brown the Chicken:
    Once the butter is hot and bubbly, add the floured chicken breasts to the skillet. Cook the chicken for about 4-5 minutes on each side, or until the exterior is a lovely golden brown and the chicken is cooked through. Remove the chicken from the skillet and set aside.

  3. Create the Sauce:
    In the same skillet, pour in the Marsala wine, stirring to deglaze the pan and incorporate any browned bits from the bottom. Add the sliced mushrooms (if using), the remaining 1/4 cup of butter, and the diluted chicken base (2 teaspoons of chicken base mixed with 1/2 cup boiling water). Stir well to combine and let the mixture simmer for a few minutes.

  4. Combine and Bake:
    Return the browned chicken breasts to the skillet, spooning some of the sauce over the top of each piece. Transfer the skillet to an oven preheated to 350°F (175°C). Bake for 1 hour, or until the chicken is fully cooked and tender.

  5. Finish the Dish:
    If you prefer a thicker sauce, you can simmer the sauce on the stovetop for a few additional minutes after baking. This will allow the sauce to reduce and thicken to your liking.

  6. Serve:
