Hearty Indonesian Beef Bone Soup with Fresh Vegetables
Beef Bone Soup (Sup Tulang Sapi)
This traditional Indonesian Beef Bone Soup, known as Sup Tulang Sapi, is a hearty and flavorful dish brimming with tender beef bones and a vibrant assortment of vegetables. Perfect for a comforting meal, this recipe combines aromatic spices and fresh ingredients to create a nourishing soup that will warm you up from the inside out.
Ingredients:
- Beef Bones: 500 grams, cut into pieces
- Green Beans: 200 grams, cut into bite-sized pieces
- Cabbage: 1 small head, chopped
- Carrots: 2 medium, peeled and sliced
- Potatoes: 2 medium, peeled and cubed
- Spring Onions: 2 stalks, chopped
- Celery Leaves: A handful, chopped
- Bay Leaves: 2
- Fried Shallots: For garnish
- Beef Seasoning (Royco Sapi): 1 tablespoon
Spice Paste:
- Garlic: 4 cloves
- Black Pepper: 1 teaspoon
- Nutmeg: ¼ teaspoon
- Cinnamon Stick: 1 small piece
- Ginger: 1-inch piece
- Salt: To taste
Instructions:
- 
Prepare the Vegetables: Begin by cutting the green beans, cabbage, carrots, and potatoes into bite-sized pieces. Wash them thoroughly and set aside. 
- 
Cook the Beef Bones: In a large pot, bring water to a boil and add the beef bones. Let them simmer until tender, which should take about 1 to 1.5 hours. Once the bones are tender, drain and discard the water. This step helps to remove excess fat and impurities from the bones.

Prepare the Spice Paste: While the bones are cooking, create the spice paste. In a mortar and pestle or food processor, combine garlic, black pepper, nutmeg, cinnamon stick, ginger, and salt. Grind until you achieve a smooth paste.

Sauté the Spice Paste: Heat a small amount of oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Add the bay leaves and beef seasoning (Royco Sapi), then stir well to combine.

Combine and Simmer: Add the sautéed spice paste mixture to the pot with the beef bones. Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.

Add the Vegetables: Add the prepared vegetables—green beans, cabbage, carrots, and potatoes—to the pot. Continue to cook until all the vegetables are tender, approximately 20-30 minutes.

Final Touches: Taste the soup and adjust seasoning if necessary. Once everything is cooked and seasoned to your liking, turn off the heat. Stir in the chopped spring onions and celery leaves.

Serve: Ladle the hot soup into bowls and garnish with fried shallots for added texture and flavor.
