The key to its distinctive taste lies in the use of kluwek (Pangium edule) and a blend of spices that create a memorable and comforting dish. This recipe provides step-by-step instructions on how to prepare this savory dish, perfect for festive occasions or a hearty meal.

Ingredients:

  • 500 grams beef ribs (approximately 3 bones, with a bit of meat) — Feel free to use a mix of meat and bones for extra flavor.
  • 1 stalk green onion
  • 7 cloves shallots
  • 4 cloves garlic
  • 1 teaspoon ground coriander

  • 3 kaffir lime leaves
  • 1 stalk lemongrass
  • 3 pieces kluwek (Pangium edule)
  • 1 liter beef broth (from boiling the beef)
  • Bean sprouts (for garnish)
  • 1 lime (for garnish)
  • Fried shallots (for topping)
  • Salt and sugar to taste

Instructions:

  1. Tenderize the Beef:
To tenderize the beef ribs and meat, you can use one of the following methods:

    • Wrap the beef in papaya leaves.
    • Cook the beef using a pressure cooker.
    • Soak the beef in pineapple juice.
  2. Prepare the Beef:

    • Clean the beef ribs thoroughly.
    • Boil the beef with a small piece of ginger to enhance the flavor. Set aside the beef broth for later use.
  3. Prepare the Kluwek:

    • Break open the kluwek shells, remove the contents, and soak them in a small amount of water to soften.
  4. Make the Spice Paste:

    • Blend the shallots, garlic, turmeric, ginger, coriander, and kluwek into a smooth paste.
  5. Cook the Spice Paste:

    • Heat a small amount of oil in a pot and sauté the spice paste until fragrant.
    • Add the beef broth to the pot.
  6. Add Aromatics:

    • Add the kaffir lime leaves, lemongrass, and galangal to the pot.
  7. Simmer the Beef:

    • Add the beef ribs and meat to the pot.
    • Simmer until the meat is tender and the flavors have melded together.
  8. Season the Soup:

    • Add chopped green onions to the pot.
    • Season with salt, sugar, and ground black pepper to taste.
    • Adjust seasoning as needed.
  9. Serve:

    • Serve the Rawon Iga Sapi with bean sprouts, fried shallots, lime wedges, sambal, crackers, and steaming hot rice.

Enjoying Your Rawon Iga Sapi:

Rawon Iga Sapi is best enjoyed hot, with the fresh, crunchy bean sprouts and the tangy lime adding a delightful contrast to the rich, savory soup. The fried shallots add a crispy texture, and the sambal provides a spicy kick. This dish is perfect for a festive meal or a comforting bowl on a cool day.
