Empal Daging Sapi (Indonesian Fried Beef)

Ingredients:

  • 250 grams beef, thinly sliced
  • 300 ml water
  • 1 tablespoon garlic, finely minced
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground white pepper
  • 1 teaspoon salt
  • 1 tablespoon candlenuts, finely ground (or substitute with macadamia nuts if unavailable)

Preparation Steps:

  1. Prepare the Beef and Seasoning:
Begin by placing the thinly sliced beef into a large frying pan. Add the water, minced garlic, ground coriander, ground cumin, ground white pepper, salt, and ground candlenuts. Mix well to ensure the beef is evenly coated with the seasoning.

  2. Cook the Beef:
Cover the frying pan with a lid and turn the heat to low. Allow the beef to simmer gently, absorbing the flavors of the spices, until the meat is tender and the water has completely evaporated. This process may take some time, so be patient to ensure the beef is perfectly cooked.

  3. Fry the Beef:
Once the water has evaporated and the beef is tender, remove the lid and increase the heat to medium-high. Fry the beef in its own rendered fat until it turns a rich golden brown and slightly crispy on the edges.

  4. Serve:
Transfer the fried beef to a serving plate. Empal Daging Sapi is now ready to be enjoyed. This dish pairs wonderfully with steamed rice and a side of fresh vegetables or sambal (spicy chili paste).

Tips:

  • For an even richer flavor, marinate the beef with the spices and let it sit for a few hours before cooking.
  • If you prefer a spicier version, add some crushed red chili peppers to the seasoning mix.
  • Ensure not to over-fry the beef as it can become too dry; aim for a crispy exterior with a juicy, tender inside.

Enjoy this traditional Indonesian dish that brings a delightful combination of flavors and textures to your table. Selamat makan! (Bon Appétit!)
