Spicy Tamarind Beef Stew with Tempeh and Long Beans

Asem Pedas Daging Sapi Yummy

Ingredients

  • 150 grams of beef
  • 7 shallots
  • 5 cloves of garlic
  • 10 bird’s eye chilies
  • 1 bay leaf
  • 1 piece of galangal (approx. 1 inch), bruised
  • 1 teaspoon tamarind paste
  • Salt, seasoning, and Royco (Indonesian seasoning) to taste

Instructions

  1. Prepare the Beef: Cut the beef into bite-sized pieces. Boil the beef until it becomes tender.
  2. Prepare the Aromatics: Thinly slice the shallots and garlic. Cut the bird’s eye chilies into three parts each. Bruise the galangal.
  3. Combine Ingredients: Once the beef is tender, add the sliced shallots, garlic, chilies, bruised galangal, bay leaf, and tamarind paste to the pot.
  4. Add Vegetables (Optional): Feel free to add any vegetables you have available in your refrigerator. For this recipe, I added a diced block of tempeh and some long beans cut into pieces.
  5. Season and Simmer: Add salt, seasoning, and Royco to taste. Adjust the seasoning according to your preference. Let it simmer until all the flavors are well combined.
  6. Serve: Once done, remove from heat and serve hot.
