Sambal Shrimp, Beef Liver & Potatoes

Ingredients

  • 300 grams of shrimp, head removed
  • 250 grams of beef liver, diced
  • 3 potatoes, diced
  • 1 large onion, sliced
  • 1 shallot, sliced
  • 1 tablespoon granulated sugar
  • Salt to taste

For the Spice Paste:

  • 25 red chilies
  • 2 cloves of garlic
  • 6 shallots
  • 3 large tomatoes
  • Water as needed

Instructions

  1. Preparation:

    • Begin by slicing the large onion and shallot.
    • Blend all the spice paste ingredients (red chilies, garlic, shallots, tomatoes, and water) into a smooth paste.
  2. Cooking Steps:

    • Clean the shrimp thoroughly and set aside.
    • Boil the diced beef liver in boiling water until cooked through. Once done, drain and fry until slightly crispy.
    • Dice the potatoes and fry them until golden brown.
  3. Cooking the Dish:

    • Heat a bit of oil in a large pan or wok over medium heat.
    • Sauté the sliced shallot and onion until fragrant.
    • Add the blended spice paste and continue to cook until the oil starts to separate from the paste.
    • Season with salt and granulated sugar, adjusting to taste. Continue to cook until the mixture bubbles and thickens.
    • Add the shrimp to the pan and cook until they are about halfway done.
    • Next, add the fried potatoes and cooked beef liver to the mixture.
    • Stir well and cook until everything is well combined and the shrimp are fully cooked.
  4. Serving:

    • Once the dish is dry and fully cooked, transfer it to a serving bowl.
    • For an added touch of flavor and texture, you can sprinkle fried shallots on top before serving.
