Rawon Daging Sapi Recipe
Ingredients:
- 1 kg beef brisket (presto until tender, cut into approximately 2×3 cm pieces)
- Blended spices:
- 15 shallots
- 10 garlic cloves
- 2 tbsp ground coriander
- 1/2 tsp ground turmeric
- 3 cm ginger
- 2 cm galangal
- 5 kluwek nuts (ensure they are not bitter)
- Salt, sugar, and stock powder to taste
- Complements:
- 3 kaffir lime leaves
- 5 bay leaves
- 3 stalks of lemongrass (bruised)
- Finish:
- 2 tomatoes (cut into 8 pieces)
- 2 stalks of spring onions (cut into 3 cm pieces)
- Delmonte tomato sauce (optional)

Prepare the Blended Spices:
- Blend the shallots, garlic, ground coriander, ground turmeric, ginger, galangal, and kluwek nuts into a fine paste.

- In a large pot, sauté the blended spices along with the kaffir lime leaves, bay leaves, and lemongrass until fragrant.

- Pour in the beef broth that was used to boil the beef. Add the tomatoes and optional Delmonte tomato sauce for a richer flavor.

- Season the soup with salt, sugar, and stock powder to taste.

- Add the cut beef pieces and spring onions to the pot. Allow the soup to come to a boil.
