Hearty Shanghai Beef Porridge with Crispy Wonton and Spicy Sambal

Bubur Daging Sapi Shanghai

Ingredients:

  • 250 grams of beef tenderloin
  • 3 bay leaves
  • 3 cm ginger
  • 3 cups of white rice
  • Salt
  • Pepper
  • Beef bouillon (Royco)
  • Garlic

Accompaniments:

  • Lettuce leaves
  • Fried shallots
  • Celery
  • Fried wonton skins
  • Emping (crackers)
  • Sambal (spicy condiment)
  • Cakwe (fried dough sticks)

Instructions:

  1. Prepare the Beef:
    • Grind or finely chop the beef tenderloin.
  2. Cook the Porridge:
    • Combine the rice and ground beef in a large pot.
    • Add water and cook over medium heat, stirring occasionally, until the rice breaks down and the mixture thickens into a porridge.
  3. Season the Porridge:
    • Once the porridge is almost ready, season with salt, pepper, and beef bouillon (Royco) to taste.
  4. Prepare the Ginger and Garlic:
    • Finely chop the garlic and fry until golden brown. Set aside.
    • Blend the ginger into a paste and add it to the porridge along with the fried garlic and a little of its frying oil. Stir well and continue cooking until fully incorporated and the porridge is fragrant and flavorful.
  5. Prepare the Accompaniments:
    • Cut the wonton skins into thin strips and fry until crispy.
    • For the sambal, fry peanuts and chilies until fragrant, then blend into a smooth paste. Fry the paste again, seasoning with salt and a little sugar to taste.
  6. Serve:
    • Serve the porridge hot, garnished with lettuce leaves, fried shallots, chopped celery, fried wonton skins, emping, sambal, and cakwe.
