Spicy Ayam Gongso (Indonesian Sweet and Spicy Chicken)

Ingredients:

  • 250 grams chicken, cut into pieces
  • 1 tomato, chopped
  • 3 tablespoons sweet soy sauce (kecap manis)
  • Salt, to taste
  • Chicken bouillon powder, to taste
  • 50 ml water
  • Green onions, chopped
  • Fried shallots, for garnish
  • Thinly sliced cabbage, as desired
  • 5 shallots, sliced
  • For the spice paste:
    • 8 shallots
    • 4 cloves garlic
    • 8 red chilies
    • 5 bird’s eye chilies
    • 2 candlenuts
    • 1 teaspoon black pepper

Instructions:

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, red chilies, bird’s eye chilies, candlenuts, and black pepper into a smooth paste using a food processor or mortar and pestle.
  2. Cook the Aromatics:

    • Heat a little oil in a pan over medium heat. Sauté the sliced shallots and the prepared spice paste until fragrant and the shallots begin to soften.
  3. Add Tomato and Liquid:

    • Add the chopped tomato to the pan and cook until the tomato starts to soften. Pour in the water and stir to combine.
  4. Season and Simmer:

    • Add the sweet soy sauce, salt, and chicken bouillon powder. Stir to combine and bring the mixture to a gentle simmer.
  5. Cook the Chicken:

    • Add the chicken pieces to the pan. Cook, stirring occasionally, until the chicken is fully cooked and the sauce has thickened to your liking. If you prefer a bit of sauce, leave it slightly watery.
  6. Add Vegetables:

    • Stir in the thinly sliced cabbage and green onions. Cook for an additional few minutes until the cabbage is tender and has wilted slightly.
  7. Serve:

    • Transfer the dish to a serving platter. Garnish with fried shallots for added crunch and flavor.
  8. Enjoy:

    • Serve hot with steamed rice and enjoy your flavorful and spicy Ayam Gongso!
