Ingredients

  • 500 grams chicken offal (jeroan ayam)
  • 5 meatballs (bakso/pentol)
  • 3 pieces of raw tofu
  • 6 cloves of shallots (bawang merah)
  • 3 cloves of garlic (bawang putih)
  • 8 bird’s eye chilies (cabe rawit)
  • 2 large red chilies (cabe merah besar)
  • 1 tablespoon coriander seeds (ketumbar)
  • 1/2 inch turmeric root (kunyit)
  • 1/2 inch galangal (laos), crushed
  • 2 kaffir lime leaves (daun jeruk)
  • Salt to taste
  • 2 tomatoes
  • Sweet soy sauce (kecap manis) to taste
  • Oil for frying

Instructions

  1. Prepare the Chicken Offal: Clean the chicken offal thoroughly and rinse under cold water. In a pot, bring water to a boil and add the offal with aromatics such as crushed garlic, salt, ginger, coriander seeds, and turmeric. Cook until tender, which may take about 30 minutes. Once done, drain and set aside.

  2. Fry Ingredients: Cut the tofu, meatballs, and cooked chicken offal into bite-sized pieces. Heat oil in a pan and fry the tofu, meatballs, and chicken offal until golden brown. Remove from oil and drain on paper towels.

  3. Blend the Spices: In a blender or food processor, combine shallots, garlic, bird’s eye chilies, large red chilies, coriander seeds, and turmeric. Blend into a smooth paste.

  4. Cook the Spices: Heat a bit of oil in a pan over medium heat. Add the spice paste along with the crushed galangal and kaffir lime leaves. Sauté until fragrant and the paste has cooked through.

  5. Combine Ingredients: Add the fried tofu, meatballs, and chicken offal to the pan with the spice paste. Stir to coat everything evenly with the spices. Add a small amount of water to create a sauce, and season with salt, a pinch of sugar, and sweet soy sauce to taste.

  6. Finish the Dish: Allow the dish to cook for another 10 minutes, letting the flavors meld together. Slice the tomatoes and add them to the pan, cooking just until they are heated through.

  7. Serve: Taste and adjust the seasoning if needed. Serve the Krengsengan Jeroan Ayam Tahu Bakso hot, accompanied by steamed rice for a complete meal.
