  • 1 packet Ladaku seasoning
  • 1 packet chicken stock powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • Enough water

For the Spice Paste:

  • 2 inches turmeric root
  • 2 candlenuts
  • 1 teaspoon coriander seeds
  • 6 shallots
  • 4 garlic cloves

Instructions

  1. Prepare the Spice Paste:

    • In a blender or food processor, grind together the turmeric, candlenuts, coriander seeds, shallots, and garlic until smooth. Set aside.
  2. Cook the Chicken:

    • In a large pot, bring water to a boil. Add the chicken drumsticks and crushed ginger. Cook until the chicken is tender and fully cooked through. Remove the chicken and set aside to cool. Shred the chicken into bite-sized pieces once cooled.
  3. Sauté the Spice Paste:

    • In a separate pan, heat a small amount of oil and sauté the spice paste until it turns golden and fragrant.
    • Add the crushed lemongrass, galangal, kaffir lime leaves, and bay leaves to the pan. Stir and cook for a few more minutes to release the flavors.

    • Add lime juice to the soup to give it a fresh, tangy flavor. Stir well and remove from heat.
  6. Assemble the Soto Ayam:
