Indonesian Grilled Beef Skewers with Pineapple Marinade

Sate Sapi (Indonesian Beef Skewers)

Ingredients:

  • 500 grams beef (use sirloin, rib-eye, or thigh)
  • 150 grams pineapple
  • Bamboo skewers (soaked in water)

For the Marinade:

  • 3 cloves garlic
  • 5 shallots
  • 1 teaspoon coriander seeds
  • 2 cm ginger
  • 1 segment young galangal
  • Salt to taste
  • 3 tablespoons sweet soy sauce

For Garnishing:

  • Fried shallots
  • Sliced shallots
  • 1 red tomato, sliced
  • 1 cucumber, sliced

For the Sweet Soy Sauce Chili Dip:

  • 1 clove garlic
  • 5 red bird’s eye chilies (or more to taste)
  • Sweet soy sauce (like Kecap Manis)

Steps:

  1. Prepare the Beef: Cut the beef into bite-sized cubes. Grate the pineapple and rub it onto the beef. Allow it to marinate for 15 minutes. Be careful not to exceed 15 minutes to avoid the beef becoming too tender. After marinating, remove the beef from the pineapple.

  2. Marinate the Beef: Blend the garlic, shallots, coriander, ginger, and young galangal into a smooth paste. Mix this paste with the beef along with 3 tablespoons of sweet soy sauce. Marinate in the refrigerator for 30 minutes.

  3. Skewer the Beef: After 30 minutes, thread the marinated beef onto the bamboo skewers, placing 3 to 4 pieces of beef per skewer.

  4. Grill the Skewers: Grill the beef skewers on a hot grill or a griddle pan, occasionally basting with the leftover marinade. If using a Happycall or similar pan, grill until cooked through.

  5. Prepare the Garnishes: While the skewers are grilling, prepare your garnishes. Arrange sliced shallots, tomato, cucumber, and fried shallots on a serving plate.

  6. Make the Sweet Soy Sauce Chili Dip: Fry the red chilies and garlic until fragrant. Grind them into a paste, then transfer to a small bowl. Add sweet soy sauce to taste.

  7. Serve: Once the beef skewers are cooked, place them on a serving plate. Garnish with sliced shallots, tomato, cucumber, and fried shallots. Serve warm with the sweet soy sauce chili dip on the side.
