Rendang Hati Sapi: A Rich and Savory Beef Liver Delight

This Rendang Hati Sapi recipe brings the robust flavors of Indonesian cuisine to your table, featuring tender beef liver simmered in a rich and aromatic spice blend. Ingredients:

  • 250 grams beef liver, cleaned and cut into pieces
  • 250 grams grated coconut
  • 6 shallots
  • 5 garlic cloves
  • 4 cm turmeric root
  • 4 cm ginger
  • 6 cm galangal
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 1/4 nutmeg
  • 1 lime
  • Salt to taste
  • Sugar to taste
  • Mushroom stock powder (optional, to taste)
  • 1 tablespoon oil for sautéing

Instructions:

  1. Prepare the Beef Liver: Clean the beef liver thoroughly and cut it into bite-sized pieces. Rub the liver pieces with lime juice and let them marinate for 15 minutes. After marinating, rinse the liver under cold water to remove any residual lime juice.

  2. Cook the Liver: In a pot, bring water to a boil and add a bay leaf along with slices of ginger. Add the liver pieces and simmer until they are tender. Drain and set aside.

  3. Prepare the Spice Paste: Blend together the shallots, garlic, nutmeg, ginger, turmeric, and galangal into a smooth paste.

  4. Sauté the Spice Paste: Heat the oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and golden. Add a bit of water if necessary to prevent burning.

  5. Combine Ingredients: Add the remaining bay leaves and kaffir lime leaves to the pan. Stir well, and then incorporate the cooked liver pieces.

  6. Add Coconut Milk: Squeeze the grated coconut with approximately 2 cups of hot water to extract coconut milk. Pour this coconut milk into the pan with the liver and spices. Mix thoroughly.

  7. Simmer the Rendang: Allow the mixture to simmer gently until the coconut milk reduces and the sauce thickens, coating the liver pieces with a rich, flavorful gravy. Adjust seasoning with salt, sugar, and mushroom stock powder if desired.

  8. Serve: Once the Rendang has reached your desired consistency and the flavors have melded together beautifully, remove from heat. Serve the Rendang Hati Sapi hot, paired with steamed rice or your favorite side dishes.
