Beef Teriyaki ala Hokben: A Delightful Teriyaki Beef Bowl

Ingredients:

  • 500 grams of beef (preferably lean cuts)
  • For Sautéing:
    • 3 tablespoons margarine or butter
    • 4 cloves garlic, finely chopped
    • 2 large onions
    • 1 stalk green onion
    • 7 tablespoons teriyaki sauce (e.g., Kikkoman)
    • 1 tablespoon sweet soy sauce
    • 1 teaspoon sesame oil (optional)
    • 1 teaspoon soy sauce (can be replaced with salt)
    • 1 teaspoon fish sauce (optional)
    • 1 teaspoon mushroom seasoning
    • 2 tablespoons water
    • Salt, sugar, and water to taste
  • For Tenderizing the Meat:
    • 1 medium pineapple (pureed into juice)
    • 1 lime (or lime and kaffir lime leaves)
  • For Garnishing:
    • Sesame seeds
    • Sliced green onion

Steps:

  1. Prepare the Beef: Thinly slice the beef into long strips. It’s easier to slice the beef thinly if it is slightly frozen. Rinse the beef thoroughly. Marinate the beef in the pineapple juice and lime juice mixture for 5-10 minutes to tenderize. Drain the beef after marinating.

  2. Sauté the Aromatics: Heat the margarine or butter in a large skillet over medium heat. Add the chopped garlic and sliced green onion, sautéing until fragrant.

  3. Cook the Beef: Add the marinated beef strips to the skillet. Cook until the beef is no longer pink and starts to brown. Add the teriyaki sauce, sweet soy sauce, soy sauce (or salt), fish sauce (if using), and mushroom seasoning. Stir well to coat the beef evenly.

  4. Incorporate the Onions: Add the sliced onions to the skillet. Continue to cook, stirring occasionally, until the onions are soft and translucent and the sauce has reduced slightly.

  5. Thicken the Sauce: If desired, mix a small amount of cornstarch with water to create a slurry and add to the skillet to thicken the sauce. Stir until the sauce reaches your preferred consistency. Turn off the heat.

  6. Serve: Transfer the beef and sauce to serving dishes. Garnish with sesame seeds and sliced green onions.

  7. Beef Bowl: Serve the beef over a bed of steamed rice. Add additional sesame seeds and green onions on top for extra flavor and presentation.
