Daging Sapi & Tetelan Gore-Gore: A Flavorful Indonesian Beef and Bone Dish

Ingredients:

  • 200 grams of beef (daging sapi), cut into pieces
  • 100 grams of beef bones (tetelan), cut into smaller chunks
  • 1 stalk lemongrass (serai), smashed
  • 2 segments galangal (lengkuas), sliced
  • 3 cm cinnamon stick (optional, can be omitted)
  • Salt, sugar, and pepper to taste
  • 1 tablespoon of chicken or beef bouillon powder
  • 1 tablespoon tamarind water (air asam)
  • For the Spice Paste (Bumbu Halus):
    • 5 shallots (bawang merah), peeled
    • 3 cloves garlic (bawang putih), peeled
    • 5 red curly chilies (cabe merah keriting), seeds removed

Instructions:

  1. Prepare the Meat:
    Begin by boiling the beef and beef bones in a pot of water until they become tender. Once cooked, cut them into bite-sized pieces and set aside.

  2. Make the Spice Paste:
    In a blender or food processor, combine the shallots, garlic, and red chilies. Blend until a smooth paste forms. If you prefer a more aromatic flavor, you can also grind these ingredients using a mortar and pestle.

  3. Cook the Aromatics:
    Heat a bit of oil in a pan over medium heat. Add the galangal slices and lemongrass, cooking them until they become fragrant. Then, add the spice paste to the pan and sauté until it releases a rich aroma.

  4. Combine Ingredients:
    Add the cooked beef and beef bones to the pan with the aromatic spices. Stir well to ensure the meat is coated with the spice paste.

  5. Season the Dish:
    Season the mixture with salt, sugar, pepper, and chicken or beef bouillon powder. Add just enough water to cover the meat, and cook until the flavors meld and the meat absorbs the spices.

  6. Add Tamarind Water:
    Stir in the tamarind water and adjust the seasoning as needed. Cook for a few more minutes to allow the flavors to blend.

  7. Serve:
    Once the dish is well-seasoned and the meat is tender, remove it from the heat. Serve hot and enjoy the rich, savory flavors of this traditional Indonesian dish.
