Sapi Bumbu Kuning: A Savory Yellow Beef Stew

Ingredients:

  • 500 grams of beef (cooked, cut into cubes)
  • 6 shallots
  • 4 cloves of garlic
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 bay leaf
  • 2 glasses of water (approximately 500 ml)

Instructions:

  1. Prepare the Spice Paste: Start by finely grinding the shallots and garlic together. You can use a mortar and pestle or a food processor to achieve a smooth paste. Add the turmeric powder and ground coriander to the paste, mixing until well combined.

  2. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and bay leaf, and sauté until fragrant and golden brown. This step is crucial as it releases the essential oils and flavors of the spices.

  3. Add the Beef: Incorporate the beef cubes into the pan with the cooked spice paste. Stir well to ensure the beef is coated with the spice mixture.

  4. Simmer for Tenderness: Pour in 2 glasses of water. This will help the beef become tender and allow the flavors to meld together. Bring the mixture to a boil, then reduce the heat to a gentle simmer.

  5. Cook Until Tender: Allow the beef to cook in the simmering liquid until it becomes tender. This usually takes about 30-45 minutes, depending on the cut of beef used. Stir occasionally to prevent sticking and ensure even cooking.

  6. Adjust and Serve: Once the beef is tender and the sauce has thickened slightly, taste and adjust seasoning if necessary. Serve the dish hot. This flavorful beef stew pairs beautifully with steamed rice.
