Rawon Sapi: A Delicious Indonesian Beef Soup

Rawon sapi, a traditional Indonesian beef soup, is known for its rich and distinctive flavor, primarily due to the use of kluwek (pangium edule) which imparts a deep, earthy color and taste. Ingredients:

  • 500 grams beef (suitable cuts for stewing)
  • Spice Paste:
    • 5 shallots
    • 5 garlic cloves
    • 3 candlenuts
    • 1 teaspoon black pepper
    • 1 teaspoon coriander seeds
    • 1 thumb-sized piece of ginger
    • 1 thumb-sized piece of galangal
    • 3 kluwek (or substitute with a mix of 1 tablespoon of cocoa powder and 1 tablespoon of dark soy sauce if unavailable)
    • Salt to taste
  • Additional Flavorings:
    • 2 kaffir lime leaves
    • 1 bay leaf
    • 2 stalks lemongrass, smashed
    • Salt to taste
  • For Garnishing:
    • Bean sprouts (toauge pendek)
    • Fried shallots (bawang goreng)
    • Chopped scallions
    • Sambal (chili sauce)

Steps:

  1. Prepare the Beef:

    • Wash the beef thoroughly. Boil it in a pot of water that has been preheated to a rolling boil for 2 minutes. Discard the water, then refill the pot with fresh water. Continue to simmer the beef until it becomes tender. Once tender, cut the beef into bite-sized pieces and return it to the pot with the broth.

    • Blend or grind the shallots, garlic cloves, candlenuts, black pepper, coriander seeds, ginger, and galangal into a smooth paste.
