Black Pepper Beef (Daging Sapi Lada Hitam)

For a delicious and aromatic Black Pepper Beef, also known as Daging Sapi Lada Hitam, you will need the following ingredients and follow these steps to create a satisfying dish that pairs beautifully with steamed rice.

Ingredients:

  • 1 kg beef sirloin, sliced thinly
  • 2 large onions
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 red chilies
  • 2 green chilies
  • 12 shallots
  • 7 cloves garlic
  • Salt, to taste
  • Granulated sugar, to taste
  • White pepper, to taste
  • Black pepper, to taste
  • Sweet soy sauce, to taste
  • Oyster sauce, to taste
  • 2 thumb-sized pieces of ginger
  • 1 tomato, seeds removed

Instructions:

  1. Tenderize the Beef:

    • Thinly slice the beef sirloin. To tenderize the meat, wrap it in papaya leaves and let it sit for 3 hours. The papaya leaves contain enzymes that help break down the meat fibers, making the beef more tender.
  2. Prepare the Beef:

    • After 3 hours, remove the beef from the papaya leaves. Season the meat with salt and a generous amount of black pepper. Place the seasoned beef in the freezer for 30 minutes to firm up, which will make it easier to handle during cooking.
  3. Fry the Beef:

    • Heat oil in a pan over medium-high heat. Fry the beef slices until they turn brown and are cooked to medium doneness, approximately 3 to 5 minutes. Be sure to turn the beef slices occasionally for even cooking. Once done, set aside.
  4. Sauté the Aromatics:

    • In the same pan, add a bit more oil if needed. Sauté the minced garlic, sliced shallots, and ginger until they release their fragrant aroma.
  5. Combine Ingredients:

    • Add the pre-fried beef back into the pan with the sautéed aromatics. Cook together, stirring frequently.
  6. Add Vegetables and Seasonings:

    • Incorporate the sliced red and green bell peppers, diced onion, and chopped tomato. Also add the red and green chilies, after removing the seeds. Season the mixture with white pepper, salt, granulated sugar, oyster sauce, sweet soy sauce, and black pepper. Adjust the seasoning to your taste. If the mixture becomes too dry, add a small amount of water to achieve the desired consistency.
  7. Simmer and Serve:

    • Allow the dish to simmer until the vegetables are tender and the flavors are well combined. Once the beef is cooked through and the sauce has thickened to your liking, remove from heat.
  8. Garnish and Enjoy:

    • Transfer the Black Pepper Beef to a serving dish. Garnish as desired and serve hot with steamed rice or your favorite side dishes.

This Black Pepper Beef recipe offers a savory and slightly spicy dish with rich, layered flavors, perfect for a satisfying meal. Enjoy the bold taste and tender texture that this classic dish brings to your table!
