Steps:

  1. Begin by cutting the beef into small cubes. Place the pieces in a pot and boil until tender. Once cooked, drain and set aside.

  2. Prepare the spice blend: In a mortar and pestle or a food processor, combine the shallots, garlic, red chilies, bird’s eye chilies, black pepper, and salt. Grind into a smooth paste.

  3. Heat a generous amount of cooking oil in a skillet over medium heat. Add the ground spice paste and the bruised galangal. Sautรฉ until the mixture becomes fragrant.

  4. Stir in the palm sugar, allowing it to melt and blend with the spices. Continue to sautรฉ until the aroma is released.
