Ingredients

For the Chicken:

  • 1/2 kg chicken, cut into pieces
  • 2 cloves garlic, crushed
  • 1 thumb-sized piece of ginger, crushed
  • 3 bay leaves
  • 1 lemongrass stalk
  • 1 tablespoon cornstarch

For the Sauce:

  • 4 cloves garlic, finely chopped
  • 3 shallots, finely chopped
  • 1 onion, finely chopped
  • 1 thumb-sized piece of galangal, crushed
  • 2 bay leaves
  • 2 tablespoons butter
  • Sweet soy sauce (kecap manis)
  • 1 packet oyster sauce
  • Salt, to taste
  • MSG (optional, to taste)
  • Tomato sauce
  • Ladaku seasoning (optional)
  • 2 large red chilies, sliced

Instructions

  1. Prepare the Chicken:
Begin by washing the chicken pieces thoroughly to ensure they are clean. In a pot, combine the chicken with enough water to cover it. Add the crushed garlic and ginger, along with the bay leaves and lemongrass. Bring the mixture to a boil and then reduce the heat. Simmer for about 20 minutes, or until the chicken is tender.

  2. Prepare the Vegetables:
While the chicken is cooking, finely chop the shallots, garlic, onion, and red chilies. Crush the galangal to release its flavors.

  3. Thicken the Chicken:
After the chicken has cooked for 20 minutes, stir in the cornstarch and mix well. Allow the chicken to cook for a few more minutes until it thickens slightly. Remove the chicken from the pot and set it aside.

  4. Prepare the Sauce:
In a separate pan, melt the butter over medium heat. Add the chopped shallots, garlic, onion, red chilies, galangal, and bay leaves. Sauté until the mixture is fragrant and the onions become translucent.

  5. Make the Sauce:
To the sautéed mixture, add 2 tablespoons of sweet soy sauce, 2 tablespoons of oyster sauce, 2 tablespoons of tomato sauce, and a bit of water. Season with salt and MSG (if using). Adjust the seasoning to taste and stir well.

  6. Combine and Cook:
Return the cooked chicken to the pan with the sauce. Stir everything together and cook for a few more minutes, allowing the flavors to meld and the chicken to absorb the sauce.

  7. Final Touches:
Taste the sauce and adjust the seasoning as needed. Once everything is well combined and flavorful, the dish is ready to be served.

  8. Serve:
Transfer the Ayam Kecap Saos Mentega to a serving dish and enjoy with steamed rice or your favorite side dishes.

Enjoy!

This Ayam Kecap Saos Mentega, rich with the essence of Indonesian cooking, brings together the savory depth of the sauce with the tender chicken, making it a comforting and satisfying meal. Serve it with love and enjoy a delicious taste of home. Bon appétit!
