Ayam Geprek Keju: A Flavorful Indonesian Fried Chicken Delight

Ingredients:

  • 1 piece of pre-cooked fried chicken (store-bought or homemade)
  • 2 cloves of garlic
  • 1 red onion
  • 5 Thai bird chilies (cabe rawit)
  • 2 red chilies
  • Salt to taste
  • White sugar to taste
  • Shredded cheddar cheese

Instructions:

  1. Prepare the Ingredients:

    • Finely chop the garlic cloves.
    • Blend the Thai bird chilies, red chilies, and red onion together. Add a pinch of salt and a small amount of white sugar to balance the heat of the chilies and to add a touch of sweetness. Use a mortar and pestle for an authentic, textured blend.
  2. Cook the Spice Mixture:

    • Heat a small amount of oil in a pan. Sauté the chopped garlic until fragrant.
    • Add the blended chili and onion mixture to the pan. Cook, stirring frequently, until the spices are well combined and aromatic.
  3. Combine and Crush:

    • Mix the sautéed spice mixture back into the mortar and pestle with a brief additional pounding, or you can use the back of a spoon to further mash it together.
    • Incorporate the pre-cooked fried chicken into the mixture. Using a fork or a pestle, press and crush the chicken into the spice blend, making sure it is well coated and evenly mixed.
  4. Finish with Cheese:

    • Transfer the spicy, crushed chicken to a serving plate. Sprinkle a generous amount of shredded cheddar cheese on top, allowing it to melt slightly from the residual heat.
  5. Serve:
