Indonesian Spiced Chicken Hearts with Crispy Potatoes

Semur Jantung Ayam Recipe

Ingredients:

  • 500 grams chicken hearts
  • 2 potatoes, diced and fried
  • 4 cm galangal, smashed
  • 5 cloves cloves
  • 3 red bird’s eye chilies
  • Water, as needed

For the Spice Paste:

  • 6 shallots, roasted
  • 4 garlic cloves, roasted
  • 4 candlenuts, roasted
  • 2 teaspoons coriander seeds, toasted
  • 1/2 nutmeg seed
  • Black pepper, to taste
  • Salt, to taste
  • Mushroom seasoning, to taste
  • Sweet soy sauce, to taste
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Spice Paste: In a blender or mortar and pestle, combine the roasted shallots, garlic cloves, candlenuts, toasted coriander seeds, and nutmeg seed. Blend or pound into a smooth paste. Season with black pepper and salt to taste.

  2. Cook the Spices: Heat a little oil in a large pan over medium heat. Sauté the spice paste along with the smashed galangal, cloves, and red bird’s eye chilies until fragrant.

  3. Add Chicken Hearts: Add the chicken hearts to the pan, stirring to coat them well with the spice mixture.

  4. Simmer: Pour in enough water to cover the chicken hearts. Add the mushroom seasoning and sweet soy sauce. Adjust the seasoning as needed and bring to a simmer.

  5. Incorporate Potatoes: Add the fried potato cubes to the pan. Continue to cook over low heat until the chicken hearts are tender and the flavors are well absorbed.

  6. Finish and Serve: Once the chicken hearts are cooked through and the sauce has thickened to your liking, remove from heat. Garnish with fried shallots before serving.
