Chicken Meatballs with Broccoli and Carrots
Ingredients:
- 2 medium carrots
- 1 small head of broccoli
- 100 grams chicken meatballs
- Red chili peppers, to taste
- 1 onion
- 2-3 garlic cloves
- 1 teaspoon cornstarch or tapioca flour, dissolved in 2 tablespoons water
- Sugar, salt, ground pepper, and mushroom stock powder, to taste
- Water and cooking oil, as needed
Instructions:
- 
Prepare the Vegetables: Peel and slice the carrots into thin rounds. Cut the broccoli into small florets. Set aside. 
- 
Sauté Aromatics: Heat a generous amount of cooking oil in a large pan over medium heat. Add the finely chopped onion and minced garlic, sautéing until fragrant and translucent. 
- 
Add Chili Peppers: Chop the red chili peppers and add them to the pan. Stir-fry for a few minutes to release their flavor. 
- 
Cook the Carrots: Add the sliced carrots to the pan. Stir-fry for a couple of minutes, then pour in a small amount of water to help cook the carrots.

Season the Dish: Season with sugar, salt, mushroom stock powder, and ground pepper to taste. Mix well.

Add the Sauce: Stir in some oyster sauce, adjusting the quantity based on your taste preferences. Ensure the ingredients are well combined.

Thicken the Sauce: Gradually add the cornstarch or tapioca flour mixture to the pan, stirring continuously to avoid lumps. This will help thicken the sauce.

Cook the Broccoli and Chicken Meatballs: Once the sauce has thickened and the carrots are tender, add the broccoli florets and chicken meatballs. Cook until the broccoli is vibrant green and tender but still crisp. 
- 
Finish and Serve: Taste and adjust the seasoning if necessary. Stir the mixture briefly to ensure everything is well-coated and heated through. Remove from heat and serve immediately.
