Hearty Chicken and Veggie Soup

Chicken and Vegetable Soup (Sup Ayam Sayur)

Ingredients:

  • 1/4 kg chicken, cut into pieces
  • 1 large carrot, peeled and sliced
  • 1 large potato, peeled and cubed
  • 1 bunch of green mustard greens (sawi hijau), chopped
  • 2 green onions (daun bawang), sliced
  • 2 stalks of celery, chopped
  • 4 cloves of garlic, minced
  • Salt and pepper, to taste
  • Sugar, to taste
  • 1 teaspoon of flavor enhancer (optional)
  • 500 ml water

Instructions:

  1. Prepare the Chicken: Begin by thoroughly cleaning the chicken pieces. Place them in a pot and cover with water. Bring to a boil and simmer until cooked through. Once cooked, remove the chicken and set aside.

  2. Cook the Vegetables: Peel and cut the carrot and potato into medium-sized pieces. Set aside.

  3. Sauté the Garlic: In a large pot, heat a small amount of oil over medium heat. Add the minced garlic and sauté until fragrant.

  4. Add Vegetables: Add the sliced carrot and cubed potato to the pot. Pour in 500 ml of water and bring to a boil. Reduce the heat and let it simmer until the vegetables are tender.

  5. Combine Ingredients: Return the cooked chicken to the pot. Season with salt, pepper, sugar, and flavor enhancer (if using). Stir well to combine.

  6. Finish the Soup: Once the vegetables are almost tender, add the chopped green mustard greens, sliced green onions, and chopped celery. Continue to cook until the greens are wilted and the soup is heated through.

  7. Serve: Ladle the soup into bowls and serve hot. Enjoy your comforting and nutritious Chicken and Vegetable Soup!
