Sweet and Sour Fried Eggs

Ingredients:

  • 2 large eggs
  • 1 small carrot, julienned
  • 1 clove garlic, minced
  • 1/2 small onion, thinly sliced
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce
  • A pinch of salt
  • A pinch of black pepper
  • A pinch of chicken bouillon powder
  • 1/4 teaspoon sugar
  • 30 ml water

Instructions:

  1. Prepare the Eggs: Start by frying the eggs until the whites are set but the yolks are still runny. Set them aside.

  2. Cook the Aromatics: In a pan, heat a small amount of oil over medium heat. Add the minced garlic and sliced onion. Sauté until fragrant and the onions are translucent.

  3. Add Carrots: Toss in the julienned carrots and cook, stirring frequently, until they start to soften but still retain some crunch.

  4. Create the Sauce: Reduce the heat to low and pour in the water. Stir in the tomato ketchup, chili sauce, salt, black pepper, chicken bouillon powder, and sugar. Mix everything well.

  5. Simmer: Allow the sauce to simmer until it begins to bubble and thicken slightly.

  6. Combine with Eggs: Gently pour the sauce mixture over the fried eggs that you set aside earlier.

  7. Serve: Serve immediately, enjoying the rich, tangy, and savory flavors of the dish.

This vibrant and flavorful dish offers a delightful balance of sweetness and tanginess, perfectly complementing the richness of the fried eggs. Enjoy!
