Crispy Ayam Geprek with Homemade Chili Garlic Sauce
Ingredients:
- 250 grams chicken, cut into pieces
- 100 grams all-purpose flour
- 1/4 teaspoon baking powder
- 100 grams Sajiku flour (or additional all-purpose flour if unavailable)
- Salt, to taste
- 15 small red chilies (cabe rawit)
- 3 cloves garlic
- Water, as needed
- Cooking oil, for frying

Prepare the Chicken:
- Cut the chicken into bite-sized pieces. Be cautious while handling the raw chicken.

Prepare the Breading:
- In a large mixing bowl, combine Sajiku flour with enough water to form a batter. The batter should not be too runny; it should have a slightly thick consistency.
- In a separate bowl, mix all-purpose flour with baking powder.

Bread the Chicken:
- Dip the chicken pieces into the Sajiku flour batter, making sure they are well coated.
- Then, roll the battered chicken pieces in the all-purpose flour mixture, pressing gently to ensure the coating sticks.

Fry the Chicken:
- Heat cooking oil in a pan over medium heat.
- Fry the coated chicken pieces until they are golden brown and cooked through, about 5-7 minutes per side. Remove from the oil and drain on paper towels.

Prepare the Chili Garlic Sauce:
- While the chicken is frying, prepare the sauce. In a mortar and pestle (or a food processor), combine the red chilies, garlic, and salt.
- Grind or blend the mixture into a coarse paste.

Combine and Serve:
- Toss the crispy fried chicken pieces in the chili garlic sauce, making sure each piece is well coated.
- Serve the ayam geprek hot with steamed rice. Enjoy the crunchiness and spicy kick!
Note: Feel free to adjust the amount of chili based on your heat preference. Also, if you prefer a less spicy version, you can reduce the number of red chilies used.
