Orak-Arik Telur Pete: A Flavorful Stir-Fried Dish with Petai Beans

Ingredients:

  • 3 large eggs
  • 1 bunch of petai beans (pete)
  • Sliced Aromatics:
    • 8 shallots
    • 5 garlic cloves
    • 3 red chilies
    • 10 bird’s eye chilies
    • 2 bay leaves
    • 1 piece of crushed galangal
  • 1 tablespoon oyster sauce
  • 2 tablespoons sweet soy sauce
  • Sugar, to taste
  • Salt, to taste
  • Optional: chicken bouillon powder

Instructions:

  1. Prepare the Aromatics: Begin by slicing the shallots, garlic cloves, red chilies, and bird’s eye chilies thinly. Set these aside.

  2. Sauté the Aromatics: In a hot skillet, sauté the sliced shallots, garlic, red chilies, and bird’s eye chilies until they release their aromatic fragrance. Add the bay leaves and crushed galangal to the skillet, stirring continuously.

  3. Add Sauces and Petai Beans: Once the aromatics are fragrant, stir in the oyster sauce and sweet soy sauce. Next, add the petai beans to the skillet. Cook for a few minutes, allowing the beans to absorb the flavors.

  4. Simmer: Pour in enough water to cover the ingredients and bring the mixture to a boil.

  5. Season: Adjust the taste with sugar, salt, and optional chicken bouillon powder to your preference.

  6. Cook the Eggs: Gently crack the eggs into the skillet, stirring occasionally to scramble them. Cook until the eggs are just set and slightly clumped together.

  7. Final Touches: Taste and adjust the seasoning if needed. Serve the orak-arik telur pete warm with steamed white rice for a delightful and hearty meal.

Enjoy this savory dish that brings a wonderful balance of flavors and textures, perfect for a comforting and satisfying meal.
