- 1 tomato
- 1 teaspoon of sugar

Instructions:
-
Prepare the Fried Eggs:
Heat a small amount of oil in a pan and fry the eggs until the whites are crispy and the yolks are cooked to your liking. Drain the eggs on paper towels and set aside. -
Fry the Anchovies:
Using the oil left from frying the eggs, lightly fry the Medan anchovies until they are crisp. Remove and drain them, keeping the oil for cooking the spice paste. -

In a blender or food processor, combine the red chilies, garlic, shallots, roasted candlenuts, and tomato. Blend until you have a smooth paste. -
Cook the Spice Paste:
Heat the oil from frying the anchovies in a pan over medium heat. Add the spice paste and cook, stirring frequently, until fragrant and the oil begins to separate from the paste. -
Add Aromatics:
Add the kaffir lime leaves and bay leaf to the pan. Continue cooking for a few minutes until the leaves release their aroma. -
Combine Ingredients:
Stir in the fried anchovies and fried eggs. Mix well to coat the eggs with the spice paste. -
Season and Simmer:
Add the sugar and adjust salt to taste. Cook until the flavors meld and the eggs are well coated with the spicy sauce. -
