Spicy Fried Eggs with Anchovies in Red Sauce Recipe

Ingredients:

  • 6 eggs, fried
  • 2 tablespoons of Medan anchovies, fried
  • 3 kaffir lime leaves
  • 1 bay leaf

For the Spice Paste:

  • 5 red chilies
  • 3 cloves of garlic
  • 5 shallots
  • 3 roasted candlenuts
  • 1 tomato
  • 1 teaspoon of sugar
  • Salt, to taste

Instructions:

  1. Prepare the Fried Eggs:
    Heat a small amount of oil in a pan and fry the eggs until the whites are crispy and the yolks are cooked to your liking. Drain the eggs on paper towels and set aside.

  2. Fry the Anchovies:
    Using the oil left from frying the eggs, lightly fry the Medan anchovies until they are crisp. Remove and drain them, keeping the oil for cooking the spice paste.

  3. Make the Spice Paste:
    In a blender or food processor, combine the red chilies, garlic, shallots, roasted candlenuts, and tomato. Blend until you have a smooth paste.

  4. Cook the Spice Paste:
    Heat the oil from frying the anchovies in a pan over medium heat. Add the spice paste and cook, stirring frequently, until fragrant and the oil begins to separate from the paste.

  5. Add Aromatics:
    Add the kaffir lime leaves and bay leaf to the pan. Continue cooking for a few minutes until the leaves release their aroma.

  6. Combine Ingredients:
    Stir in the fried anchovies and fried eggs. Mix well to coat the eggs with the spice paste.

  7. Season and Simmer:
    Add the sugar and adjust salt to taste. Cook until the flavors meld and the eggs are well coated with the spicy sauce.

  8. Serve:
    Garnish with sliced green onions and serve the spicy fried eggs with anchovies hot. Enjoy as a flavorful and aromatic dish that pairs well with steamed rice.
