Oseng Carrot and Egg Stir-Fry

Ingredients:

  • 4 carrots, julienned
  • 1 egg
  • 5 small sausages, sliced (adjust to preference)
  • 2 shallots, thinly sliced
  • 1 clove garlic, crushed and thinly sliced
  • 1/2 packet mushroom seasoning
  • Salt, to taste
  • Water, as needed
  • Oil, for sautéing

Instructions:

  1. Sauté Aromatics: Heat oil in a pan over medium heat. Add the thinly sliced shallots and garlic. Sauté until fragrant and golden brown.

  2. Add Sausages and Carrots: Incorporate the sliced sausages into the pan. Stir-fry for a few minutes until they start to brown. Next, add the julienned carrots and continue to stir-fry.

  3. Add Water: Pour in enough water to cover the mixture, depending on whether you prefer a thicker or thinner sauce. Stir occasionally.

  4. Cook Egg: Once the water reaches a boil, crack the egg into the pan. Gently stir to combine the egg with the other ingredients, allowing it to cook through and blend into the mixture.

  5. Season: Add the mushroom seasoning and a pinch of salt to taste. Adjust seasoning as necessary.

  6. Check Carrots: Taste the carrots to ensure they are tender. For a softer texture, cook a bit longer to make the vegetables more palatable for kids.

  7. Serve: Once everything is cooked and well-combined, remove from heat. Serve the stir-fry hot with steamed rice.
