Frozen Vegetable Egg Stir-Fry Recipe

Ingredients:

  • 2 large eggs
  • 1 cup (or as needed) frozen vegetables
  • 1/3 teaspoon salt (or to taste)
  • 1 teaspoon granulated sugar
  • Ground black pepper, to taste
  • 2 cloves garlic
  • 3 shallots
  • Cooking oil

Instructions:

  1. Prepare the Aromatics:

    • Thinly slice the shallots and garlic.
  2. Sauté Aromatics:

    • Heat a small amount of oil in a skillet over medium heat. Add the sliced shallots and garlic to the pan.
    • Sauté until the shallots and garlic become fragrant and slightly golden.
  3. Cook the Eggs:

    • Push the shallots and garlic to the side of the pan, creating space for the eggs.
    • Crack the eggs into the pan and let them cook for a moment before scrambling them gently.
  4. Add Frozen Vegetables:

    • Stir in the frozen vegetables, mixing them with the eggs and aromatics.
  5. Season the Dish:

    • Sprinkle in the salt, sugar, and ground black pepper.
    • Add a splash of water to help the seasoning blend and to steam the vegetables slightly.
  6. Finish Cooking:

    • Continue to stir and cook until the water evaporates and the vegetables are tender, and the flavors are well combined.
  7. Taste and Serve:

    • Taste the dish and adjust seasoning if necessary.
    • Remove from heat, and transfer to a serving dish.
