Bakmoy Ayam: Savory Chicken with Crispy Tofu

Ingredients:

  • 250 grams chicken breast, boiled for 10 minutes, drained, and added to the broth
  • 1 block Chinese tofu, cut into cubes and fried until golden
  • 2 stalks green onions, sliced for garnish and broth
  • For the Broth:
    • 1.2 liters water
    • 4 cloves garlic, crushed
    • 2 thumb-sized pieces ginger, sliced
    • 1.5 tablespoons salt
    • 0.5 tablespoon sugar
    • 0.5 teaspoon mushroom seasoning
    • 0.5 teaspoon black pepper powder
  • For the Stir-Fry Seasoning:
    • 3 tablespoons sesame oil
    • 4 cloves garlic, minced
    • 0.5 medium onion, diced
    • 1 tablespoon oyster sauce
    • 3 tablespoons sweet soy sauce
    • 3 tablespoons soy sauce (Lee Kum Kee preferred)
    • 2 ladles of broth
    • 1 tablespoon brown sugar
    • 0.5 tablespoon salt
    • 0.5 tablespoon black pepper powder

Instructions:

  1. Prepare the Chicken:

    • Begin by boiling the chicken breast for 10 minutes. This step helps to remove any impurities and foam. Once done, drain the chicken and discard the water.
    • Place the chicken into a pot with 1.2 liters of water. Add crushed garlic, sliced ginger, salt, sugar, mushroom seasoning, and black pepper powder. Bring the mixture to a boil, ensuring the chicken is fully cooked and the broth absorbs the flavors.
    • Taste the broth and adjust seasoning as needed. Once satisfied, turn off the heat and remove the chicken. Cut the chicken into cubes and set aside.
  2. Prepare the Tofu:

    • Cut the Chinese tofu into cubes and fry them in hot oil until they form a crispy skin. Set aside.
  3. Make the Stir-Fry Seasoning:

    • Heat 3 tablespoons of sesame oil in a pan. Add minced garlic and diced onion, sautéing until fragrant and golden brown.
    • Stir in the oyster sauce, sweet soy sauce, soy sauce, and brown sugar. Mix well.
    • Add 2 ladles of the prepared chicken broth to the pan. Season with salt and black pepper powder. Let the mixture simmer and the flavors meld.
  4. Combine Ingredients:

    • Add the cooked chicken cubes and fried tofu to the pan with the stir-fry seasoning. Stir to combine, allowing the chicken and tofu to absorb the flavors and the sauce to reduce and thicken.
  5. Final Touches:

    • Transfer the Bakmoy Ayam to a serving dish. Garnish with sliced green onions.
  6. Serving:

    • Serve the Bakmoy Ayam with the broth alongside steamed rice for a complete and satisfying meal.
