These Super Spicy Chicken Wings are a fiery treat for those who love a robust kick in their meals. The wings are first marinated and fried to golden perfection, then simmered in a spicy, aromatic sauce that brings together a variety of bold flavors. Hereโs how to make them:
Ingredients:
- 6 chicken wings, cut into halves
- 1 piece of ginger
- 1 piece of turmeric
- 1 piece of galangal, crushed
- Kaffir lime leaves (to taste)
- Salt (to taste)
- Seasoning powder (to taste)
- Black pepper (to taste)
- Cooking oil (as needed)
- Palm sugar (to taste)
- Water (as needed)
For the spice paste:
- 1 large tomato
- 12 red birdโs eye chilies
- 7 red chilies
- 7 shallots
- 6 cloves garlic

Marinate the Chicken Wings:
- Clean the chicken wings and season them with salt and black pepper. Let them marinate for about 30 minutes to absorb the flavors.

Prepare the Spice Paste:
- Boil the spice paste ingredients (tomato, birdโs eye chilies, red chilies, shallots, and garlic) until they become tender. Once tender, blend them into a smooth paste, adding the ginger, turmeric, and palm sugar during the blending process.

- Heat oil in a frying pan over medium heat. Fry the marinated chicken wings until they turn golden brown and crispy. Remove the wings from the oil and set them aside.
