These Super Spicy Chicken Wings are a fiery treat for those who love a robust kick in their meals. The wings are first marinated and fried to golden perfection, then simmered in a spicy, aromatic sauce that brings together a variety of bold flavors. Hereโ€™s how to make them:

Ingredients:

  • 6 chicken wings, cut into halves
  • 1 piece of ginger
  • 1 piece of turmeric
  • 1 piece of galangal, crushed
  • Kaffir lime leaves (to taste)
  • Salt (to taste)
  • Seasoning powder (to taste)
  • Black pepper (to taste)
  • Cooking oil (as needed)
  • Palm sugar (to taste)
  • Water (as needed)

For the spice paste:

  • 1 large tomato
  • 12 red birdโ€™s eye chilies
  • 7 red chilies
  • 7 shallots
  • 6 cloves garlic

Instructions:

  1. Marinate the Chicken Wings:

    • Clean the chicken wings and season them with salt and black pepper. Let them marinate for about 30 minutes to absorb the flavors.
  2. Prepare the Spice Paste:

    • Boil the spice paste ingredients (tomato, birdโ€™s eye chilies, red chilies, shallots, and garlic) until they become tender. Once tender, blend them into a smooth paste, adding the ginger, turmeric, and palm sugar during the blending process.
  3. Fry the Chicken Wings:

    • Heat oil in a frying pan over medium heat. Fry the marinated chicken wings until they turn golden brown and crispy. Remove the wings from the oil and set them aside.
  4. Cook the Spice Paste:

    • In the same pan, use 4 tablespoons of the oil from frying the chicken wings. Sautรฉ the spice paste in this oil until fragrant. Add the crushed galangal and kaffir lime leaves. Stir well and add a little water to prevent the paste from sticking to the pan. Season with salt and seasoning powder, and cook until the mixture is well combined and aromatic.
  5. Combine and Simmer:

    • Add the fried chicken wings into the pan with the spice paste. Mix thoroughly, ensuring that the wings are well coated with the spicy sauce. Let the wings simmer in the sauce until the flavors are well absorbed.
  6. Serve:

    • Once the chicken wings are well-coated and flavorful, remove from heat. Serve them hot with a side of steaming white rice for a complete and satisfying meal.
