Stir-Fried Water Spinach with Egg (Orak Arik Telur Kangkung)

Ingredients:

  • 1 bunch of water spinach (kangkung), sliced
  • 1 large egg
  • Salt, to taste
  • 1/2 tablespoon granulated sugar
  • 1/2 tablespoon ground black pepper
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons cooking oil
  • Sliced aromatics:
    • 1 clove garlic
    • 2 shallots
    • 5 bird’s eye chilies (cabe rawit)

Instructions:

  1. Heat the cooking oil in a skillet over medium heat. Add the sliced garlic, shallots, and bird’s eye chilies. Sauté until the aromatics are fragrant and golden brown.

  2. Add the sliced water spinach to the skillet. Stir and cook until the spinach is wilted and tender.

  3. Season the dish with ground black pepper, salt, granulated sugar, and sweet soy sauce. Adjust the seasoning to taste, ensuring a balanced flavor.

  4. In a separate bowl, beat the egg. Pour the beaten egg into the skillet with the spinach mixture. Stir continuously to combine the egg evenly with the vegetables.

  5. Continue to cook until the egg is fully set and well-mixed with the water spinach.

  6. Transfer to a serving dish and enjoy!
