Ingredients:
- 2 bunches of long beans, cut into bite-sized pieces
- 5 pieces of brown tofu (the type used for stuffed tofu)
- 2 tablespoons tauco (fermented soybean paste)
- 2 tablespoons sweet soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon ground black pepper
- Salt, sugar, and seasoning to taste
- 7 red bird’s eye chilies (adjust to taste)
- 2 red chilies
- 1 segment of galangal
- 1 medium green tomato
- 2 cloves garlic
- 3 shallots

- Cut the long beans and tofu into bite-sized pieces.
- Heat oil in a pan and fry the tofu until it’s half-crispy. Remove and set aside.

- In the same pan, sauté the garlic and shallots until they become fragrant.
- Add the sliced galangal, bird’s eye chilies, and red chilies. Continue to stir-fry until the chilies are fragrant.
