Stir-Fried Scrambled Eggs with Shallots

Ingredients:

  • 2 eggs, beaten, scrambled, and set aside
  • 2 tablespoons salted anchovies, fried until crispy (optional)
  • 100 grams shallots, thinly sliced
  • 10 red bird’s eye chilies, thinly sliced
  • 1 teaspoon shrimp paste (terasi)
  • Salt, to taste
  • Granulated sugar, to taste
  • Chicken broth powder, if desired
  • Cooking oil, for sautéing

Instructions:

  1. Prepare the Ingredients: Start by beating the eggs and cooking them into a scramble. Set the scrambled eggs aside. If using salted anchovies, fry them until crispy and set them aside as well.

  2. Heat the Oil: In a large pan or wok, heat a sufficient amount of cooking oil over medium heat.

  3. Sauté Aromatics: Add the sliced shallots and red bird’s eye chilies to the pan. Sauté until the shallots become fragrant and translucent.

  4. Add Seasonings: Stir in the shrimp paste, granulated sugar, salt, and chicken broth powder (if using). Continue to sauté until everything is well combined and aromatic. Adjust the seasoning to taste.

  5. Combine Eggs and Seasonings: Add the scrambled eggs back into the pan. Stir everything together until the eggs are well coated with the aromatic mixture and evenly heated.

  6. Serve: Remove from heat and transfer the stir-fried scrambled eggs with shallots to a serving dish. Serve immediately.
