Tahu Campur Seger: A Refreshing Indonesian Salad
Ingredients:
- 2 Chinese tofu cakes
- 1 head of lettuce
- 100 grams of bean sprouts
- Fried shallots (bawang goreng)
- Fresh cilantro (seledri)
- 1 cucumber
- For the dressing:
- 15 bird’s eye chilies (cabe rawit)
- 2 cloves garlic
- Tamarind paste (asam jawa) to taste
- Palm sugar (gula merah) to taste
- Salt to taste
- Sugar to taste
Instructions:

Prepare the Dressing:
- Begin by grinding the bird’s eye chilies and garlic into a smooth paste using a mortar and pestle or a blender.
- Transfer the paste into a saucepan with 1 liter of water.
- Add tamarind paste, palm sugar, salt, and sugar to the saucepan. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer until the sauce thickens slightly. Taste and adjust seasoning as needed.
- Once the sauce is done, turn off the heat and set aside.

Prepare the Salad Components:
- Briefly blanch the bean sprouts in boiling water for a few seconds to soften them. Drain and set aside.
- Slice the tofu into cubes and fry until golden brown and crispy. Drain on paper towels.
- Wash and tear the lettuce into bite-sized pieces.
- Slice the cucumber into thin rounds.

- On a serving plate, arrange the fried tofu cubes, shredded lettuce, bean sprouts, sliced cucumber, fried shallots, and fresh cilantro.
- Pour the prepared dressing over the arranged ingredients.
