Spicy Tahu Martabak (Martabak Tahu Seuhah)

Ingredients:

  • 6 pieces of firm tofu (drained and squeezed to remove excess water)
  • 5 large eggs
  • 2 sausages (diced)
  • 2 stalks of green onions (chopped)
  • 1 medium carrot (grated or finely chopped)
  • Spring roll wrappers
  • For the Spice Mix:
    • 1 teaspoon black pepper
    • 4 cloves garlic
    • 4 shallots
    • 4 bird’s eye chilies (adjust according to heat preference)
    • 1 teaspoon salt
    • 1 teaspoon seasoning powder (like Masako)

Instructions:

  1. Prepare Ingredients: Begin by chopping the green onions and dicing the sausages into small pieces. Grate or finely chop the carrot.

  2. Make Spice Mix: In a mortar and pestle or food processor, blend together the black pepper, garlic, shallots, bird’s eye chilies, salt, and seasoning powder until a smooth paste forms.

  3. Combine Filling: In a large bowl, crumble the tofu and mix it with the diced sausages, chopped green onions, and grated carrot. Add the spice mix and thoroughly combine all ingredients.

  4. Wrap: Place a spoonful of the tofu mixture onto the center of a spring roll wrapper. Fold the sides over the filling and then roll tightly to form a neat packet. Seal the edges with a little water or beaten egg.

  5. Fry: Heat oil in a pan over medium heat. Fry the wrapped tofu until golden and crispy, turning occasionally to ensure even cooking.

  6. Serve: Remove from the pan and drain on paper towels. Serve hot and enjoy your spicy Tahu Martabak!
